A 69-room boutique hotel on the Ouachita River in downtown Monroe, set across two landmark 19th-century buildings — a former opera house and grocery store — and now part of Hilton's Tapestry Collection. Co-owner Christie Echols has celiac disease and built the hotel she wished had existed: a place where nothing with gluten enters the building. The heart of it is Heirloom, the in-house restaurant serving elevated Northeast Louisiana cooking — fried green tomatoes, cornmeal-cured catfish atchafalaya with crawfish étouffée, house-made biscuits with cane-syrup butter, and, yes, beignets — all entirely gluten-free. La Fenière
Cadenet, Luberon · France
Between Lourmarin and Cadenet, at the foot of the Luberon, an old Provençal farmhouse of golden stone set in a wooded park with an olive-framed pool. Its restaurant, Le Goût du Bonheur, holds a Michelin star and a green star — and it is the only starred kitchen in the world that is entirely gluten- and dairy-free. Third-generation chef-owner Nadia Sammut, who has celiac disease, built her Cuisine Libre® on the premise her mother Reine first earned a star for in 1995: tasting menus built around the garden and sustainable fishing, breads baked from chickpea, rice and chestnut flours milled on site, food so accomplished most diners never realize it is free of anything. A 17th-century former customs house deep in the Maremma — the wild, geothermal southern corner of Tuscany most visitors never reach, among the Etruscan tufa towns of Sorano and Pitigliano. The couple who run it have built a biodynamic farm that grows its own saffron, spirulina, truffle, fruit and vegetables, and the whole kitchen is both 100% gluten-free and vegan; it has won recognition as one of Italy's most sustainable farm stays. Arenas del Mar Beachfront & Rainforest Resort

A 38-room five-star sustainable luxury boutique resort perched on a 150-foot cliff above the Pacific near Manuel Antonio, set within 11 acres of private nature reserve, with two private beaches, regenerated rainforest at its back and the national park within walking distance — howler monkeys overhead, toucans from the balcony. It was Costa Rica's first fully certified gluten-free luxury resort, certified since 2014, with menus shaped alongside celiac pastry chef Monica Glass, trained at Le Bernardin. A working cattle ranch and eco-adventure lodge spread across some 3,400 acres at the foot of the active Rincón de la Vieja volcano, owned by the Batalla family for more than forty years.
