Spain has made significant strides in gluten-free awareness over the last decade, and for good reason — celiac disease rates in Spain are comparable to the European average, and the dining culture is robust enough that safe options have expanded considerably in major cities. Barcelona, Madrid, Seville, and San Sebastián all have well-developed GF restaurant scenes, and the tradition of tapas and pintxos — while requiring careful navigation — opens the door to some genuinely memorable gluten-free dining.

The challenge in Spain is consistency. Awareness is strong in cosmopolitan areas, but can be patchy in smaller towns and more traditional establishments. The Basque Country, in particular, presents a specific consideration: pintxos (the beloved bar snacks of San Sebastián and Bilbao) are almost universally served on bread.   • Jamón ibérico, fresh seafood, patatas bravas, tortilla española, and grilled meats are the backbone of Spanish cuisine and are largely naturally gluten-free — always confirm preparation oils and sauces.
